The problem clearly is related to what laws do apply to a website. This website seems to be hosted in the US, so it appears like US law would apply. But when you open up your website to international traffic, you might be held accountable for what is happening on your site based on whatever country the visitor came from
Example: Facebook (Meta Corp.) is held accountable for data privacy breaches under EU laws, even though the company is located in the US.
I am pretty sure there is no law (neither in the EU nor in the US) that requires a website owner to keep a copy of all user accounts and posts (including meta data like IP adresses) unless this has been ordered specifically by law enforcement authorities. So the smart way forward for the admin would be to just delete everything as requested, rather than trying to get into a legal battle about what can or can not be kept. Just not worth it.

I am a doctor, not a lawyer, but if I was trying to get this enforced, I would argue that I own the right to whatever I have written, because it is my intellectual property. And when I posted it on this website, I have given implicit consent for my intellectual property to be displayed here. Now I revoke that consent and threaten to sue the website owner for copyright infringements, if my posts are not deleted.
I might or might not win, but considering that each party in the US has to pay for their own legal council, simply deleting the account and all related posts is clearly the smarter option from the position of the site owner.
